Administrative History
For nearly a century instruction in home economics has been a vital part of Oklahoma State University. In 1900 Maude Gardiner was hired to establish a department of Domestic Economy. Miss Gardiner attracted fifty female students by October of that year. The department continued to grow and in 1909 became a division with six faculty members. Graduate courses were also established at that time. By 1918 a M.S. in home economics was offered. Short courses were also taught as well as courses specifically for men. Growth and change have continued throughout the century as home economics faculty have adapted programs to meet the needs of students and the changing society. Several departments function under the guidance of the college, including home economic education, clothing and textiles, hotel and restaurant administration and family study programs.
Minna A. Stoner was the first dean listed in the college catalog. Three women guided home economics for extended periods. Nora A. Talbot was named dean in 1923. She held the position until 1950. (See collection 96-004) Lela O’Toole assumed the role of dean in 1951 and continued until 1975. (See collection 95-059) Beverly Crabtree was named as Dean O’Toole’s successor and remained dean until 1987.
International education is an important part of home economics. In the 1950s several international students attended O.S.U. to complete degrees or take courses in home economics. These students were funded through government programs sponsored by the USDA. In 1957 a team of professors from O.S.U. helped establish a college of home economics in Dacca, East Pakistan. This project was funded by the Ford Foundation.
The Home Economics Club was formed in 1923-24. The Home Economics Alumni Association was formed Homecoming weekend November 1957. This group has been an active supporter of home economics education.
